The dried seeds of white mustard have a fresh, sharp flavor. From the finely ground seeds, you can easily make mustard yourself, along with vinegar and water. Mustard seeds are delicious with pork and fish, in mashed potatoes and Dutch-style mashed dishes, in curries, cheese dishes, and soups. They also add a spicy flavor to pickled vegetables, such as gherkins and onions, and to various types of chutney.
