Fennel seeds have a mildly spicy, anise-like fragrance and flavour. They are very tasty with fish, pork and sausages, in home-made bread, as an extra anise touch to braised fennel, as well as in a variety of Italian dishes and Indian curries. You can also use fennel seed for pickling, especially for making gherkins.
The smell and taste become even more intense if you briefly toast the seeds in a dry frying pan before use.
Tip: fennel seeds can also be used to make a delicious herbal tea, which can be drunk on its own or in combination with other herbs such as chamomile, mint and liquorice.
