This extra virgin olive oil is of superior quality and was selected by certified olive oil expert Vivian van Wordragen. This is a ‘monocultivar’ in other words it is made from a single species of olive: Biancolilla. Biancolilla is typical for central-western Sicily and is known for its delicate, fruity extra virgin olive oil with hints of tomato, herbs and almond. The name Biancolilla refers to the olives changing colour from green to lilac-red. This olive oil is 100% organic and ideal for light dishes such as starters, pasta, salads, vegetable soup, marinated and grilled fish, carpaccio, raw vegetables and steak tartare.
