Clove, or "tjenkeh" in Indonesian cuisine, has an intense, unique aroma and flavor. It is used – sparingly – in various marinades for meat and game, in Asian cuisine as part of many spice blends, in sauerkraut, red cabbage, and in various stews. Ground clove is also one of the spices used for speculaas and gingerbread.
Tip: Stick some cloves into a slice of orange and let it simmer together with a cinnamon stick in red wine over low heat. Delicious.
