Cardamom is a relative of ginger, and you can taste it: the flavor is delicately sweet. These intensely aromatic 'pods' are used whole or just the loose seeds in various Asian dishes, stews, and chutneys. Cardamom is also delicious in baked goods, such as apple pie dough, cookies, and desserts, as well as in mulled wine.
Tip: Try cooking some whole cardamom pods with rice; it's delightful with curry! You can also slice the pod open with a sharp knife and grind the dark seeds finely. This is handy if you want to incorporate cardamom into dough, for example.
