Vadouvan is a curry blend from southeastern India with a French touch due to the former colonial influence in that region. The flavour is very herby and quite mild. Use Vadouvan like other curry powders in curries, all kinds of stews, with fish and poultry, but certainly also to give dishes a mild curry flavour. Tip: Fry vadouvan in oil or (clarified) butter before adding the other ingredients, so its smell and flavour come out well.
