Vadouvan is a curry mixture from southeast India, with a French touch due to the former colonial influence in that region. The flavour is very spicy and quite mild. Use Vadouvan like other types of curry in curries, all kinds of stews, with fish and poultry, but certainly also to give dishes a mild curry flavour.
Tip: Fry vadouvan in oil or (clarified) butter before adding the other ingredients, so the smell and taste come out well.
