Black pepper consists of the unripe, dried berries of the pepper plant and has a milder, spicier and more aromatic flavour and smell than white pepper. Black pepper is an indispensable seasoning in almost all dishes as it adds zest, but is not spicy. Use in marinades, stews, soups, and sauces, as well as in Asian and North African spice blends. Freshly ground black pepper is more intense in flavour than pre-ground powder. Tip: If you coarsely grind or crush the peppercorns, the pepper will be less sharp and extra aromatic.
